Mustard is one of my favorite cooking greens. The leaf starts out so bitter, but when cooked the flavor is amazing and all the bitterness is gone. The plant is beautiful and I could have several all over my gardens, especially the purple mustard. Mustard is an excellent source of minerals including potassium, calcium, magnesium, and phosphorous. It is also good for fiber, and contains vitamins A, K, C, and B9. This plant prefers cooler temperatures, but in the tower it can be grown just about year round.
