Komatsuna (Japanese Mustard Spinich) is a leafy green that originates from Japan and Taiwan. Its long slender leaves are sweet yet also have a mild mustard bite.
Komatsuna is very rich in beta carotene, calcium and Vitamins A, B2, C and K. The leaves also possess glucisunolates, which is thought to have a cancer fighting effect.
You can harvest Komatsuma at any stage of growth; the smaller leaves are tender and taste really delicious in a salad or steamed. As the plant grows the leaves become less tender and require a longer cooking time, but enhance the flavor.
